The roots of the Chicory plant have been used as a coffee substitute for decades? The chicory plant is a weed with blue flowers that can be found all over North America along the side of the road or in abandoned fields and lots. Apparently you can dig them up any time, wash them and roast them until they turn dark brown and snap easily. Roasted roots are ground and brewed like coffee. It has no caffeine but tastes a lot stronger!
